I can't find a decent all-in-one ripper/encoder either.
No big deal, when I'm using a Sun system at work, I use
command-line rippers and encoders and script the whole thing
with Kornshell.

All you need for encoding from LP or tape is:

LP or tape player (duh)
Sound recording hardware in your computer (soundblaster, whatever)
Preamp (usually in a receiver) if you're recording from LP
Cable to get from line out of LP/Tape to line in of computer
Sound recording/editing software
An MP3 encoder

Rippers I use:

Solaris: gallette (free, find it on the web somewhere)
Linux: cdparanoia (likewise)
Win95: CD Spin Doctor (came with my HP CDR drive)

Recorders I use:

Solaris: audiotool (comes with the OS)
Linux: nothing (I can't find anything, help!)
Win95: Wave for Windows (ancient Win3.1 program from Turtle Beach)

Encoders I use:

Solaris/Linux/Win95: l3enc (Fraunhofer, fast, high quality, but
	very expensive)

Solaris/Linux/Win95: Bladeenc (Free, good speed, good quality)

There are tons more options for all of the above.  This is just
a list of what I use, which is basicly whatever I have access
to and/or the better free things I've tried.
